As this site goes live in April 2020, many oyster farmers in the United States have seen catastrophic drops in sales because the restaurants who order from them are closed to fight the spread of COVID-19. Same for vegetable farms and foragers who sold directly to chefs. The future is foggy.
But maybe the people who can best imagine how to adapt to systemic stress are the ones who watch other creatures doing it season after season – not just the farmers and fishers and foragers, but anyone whose livelihood depends on the well-being of plants and animals we eat.
