Racket Cake (PDF download)

From the June 2024 Local Technique newsletter, a recipe inspired by a certain English tennis championship and its famous strawberries and cream.

Wimbledon doesn't actually do cake (not famously at least), so this particular recipe might feel more at home on the public ping pong tables of cake-obsessed Berlin than in the rarefied air of the All-England Championships. It is meant to be served with Courtside Strawberries and Cream, but what the court means is up to you. Let your imagination take you wherever you prefer.
